Slow Cooked Lamb Shank

INGREDIENTS
2 tbsps vegetable oil
4 lamb shanks
100g plain flour, seasoned
250ml red wine
1 onion, sliced
3 sprigs rosemary
3 bay leaves
300ml chicken/vegetable stock
TO SERVE
INSTRUCTIONS
Heat the oil in a large frying pan
Coat the lamb shanks in the seasoned flour and fry for 4-5 minutes, until browned all over
Put the lamb shanks in the slow cooker
De-glaze the frying pan with the red wine and cook for 2-3 minutes or until the volume of liquid reduces by half. Pour the liquid into the slow cooker over the lamb shanks
Add the onion, rosemary, bay leaves and stock to the slow cooker (the liquid should cover the meat – add more stock/boiling water if necessary)
Cook on high for eight hours
Tender lamb shanks with meat which falls off the bone are mouth-watering. We love this recipe – serve with mash, for a comforting supper.
