Cotswold Burger

INGREDIENTS

1kg premium beef, minced

2 garlic cloves, finely chopped

1 tbsp Worcestershire sauce

2 tsps Dijon mustard

Handful of fresh flat-leaf parsley, chopped

1 large gherkin, finely chopped (optional)

1 large free range egg yolk

Salt and pepper, to season

TO SERVE

1 tbsp sunflower oil

200g cheese (any type suitable for melting)

8 burger buns

2 tsps Dijon mustard

4 tbsps mayonnaise

Sliced beef tomato, avocado and red onion

Lettuce leaves

INSTRUCTIONS

30mins prep & 20mins cooking time
Mix all the ingredients for the burgers in a bowl, seasoning well. Cover and refrigerate for 1 hour
Shape the mixture into 8 patties
Heat a griddle pan or barbecue. Brush the burgers with oil and cook for 3-4 minutes per side (or until well browned)
Top with cheese until melting, and toast the burger buns under the grill
Mix together the mustard and mayonnaise, and spread over the buns
Build your burger with toppings of your choice

To freeze, add a layer of baking paper between each patty and store in a freezer-proof container. They’ll keep for up to 3 months. Fully defrost in the fridge before cooking.
