Classic Mediterranean Chicken Marinade

45 minutes


1 garlic clove, crushed

2 tbsps lemon juice

2 tbsps olive oil

Handful of fresh herbs, finely chopped (perhaps oregano, parsley, coriander or basil)

Salt and pepper, to season

400g chicken (your preferred cut; we think fillets work nicely)



20mins prep & 25mins cooking time
Mix the garlic, lemon juice, olive oil and herbs in a bowl, and season well
Add the chicken, cover and marinate for 1-2 hours in the fridge
Cook the chicken however you desire (it tastes great skewered and grilled on the barbecue!)
Serve atop a leafy green salad, or inside a warmed pitta with dressing
